Chicken, Bacon, and Brussels Sheet Pan Supper

Ingredients
- 3-4 slices of bacon
- 12 oz. Brussels sprouts
- Olive oil
- Salt and pepper
- 8 oz. chicken, breast or thighs
Instructions
- Preheat the oven to 400 degrees.
- Cut the bacon into bite-sized pieces. Rinse, trim, and halve the brussels sprouts. In a medium bowl or on a sheet pan, combine the Brussels sprouts, 2 tsp. of olive oil, and half of the bacon. Mix, then season with salt and pepper. Arrange the sprouts so they are spread out and cut-side down on the baking sheet.
- Cut the chicken into bite-sized pieces. In a small bowl, combine the chicken, the remaining bacon, 1-2 tsp. of olive oil, salt, and pepper. Arrange chicken/bacon on a separate baking sheet.
- Place both baking sheets in the oven and bake for 20 minutes. Remove, combine, and enjoy!
