Carrot Salad

Ingredients
- 2 Tbsp. creamy peanut butter
- Juice of 1/2 lime (about 1 Tbsp.)
- 1 Tbsp. coconut aminos or soy sauce
- 1 tsp. brown sugar
- 1 clove of garlic, minced
- 1/4 - 1/2 inch fresh ginger, finely grated
- 10 oz. shredded carrots
- Garnish: cilantro, chopped peanuts
Instructions
- In a medium skillet, heat the peanut butter, lime juice, coconut aminos, brown sugar, garlic, and ginger over low heat. Whisk until a thick sauce is formed. Turn off the heat and stir in the carrots. Garnish with cilantro and chopped peanuts.
