Buffalo Shrimp Lettuce Wraps

With a simple spicy kick, these Buffalo shrimp lettuce wraps make a quick and easy low-carb lunch!

Ingredients

  • 1 head of butter lettuce, leaves separated
  • 1 lb. shrimp, peeled & deveined
  • 2 Tbsp. butter
  • Salt and pepper
  • 1/4 c. hot sauce
  • Juice of 1/2 lime (about 1 Tbsp.)
  • Optional: bell peppers, carrots, onion, celery, cheese
  • Optional: ranch or bleu cheese dressing

Instructions

  • Wash and dry the lettuce leaves. Then, wash and chop any other veggies (bell peppers, carrots, onion, celery, etc.)
  • Heat a large skillet with 2 Tbsp. of butter over medium heat.
  • Next, add the shrimp and cook for 2-3 minutes per side, until pink and opaque. Season with salt and pepper.
  • Add hot sauce and lime juice to the skillet. Then, stir to combine and coat the shrimp.
  • Finally, assemble the wraps by layering shrimp, veggies, cheese, and any dressing over the lettuce leaves.
