Buffalo Chicken with Sweet Potato Planks
Bursting with spicy flavor, these strips of Buffalo chicken are served on broiled sweet potato planks!

Ingredients
- Olive oil
- 1 lb. chicken tenderloins
- Salt and pepper (or garlic salt)
- Juice of 1/2 lime
- 1/4 c. hot sauce
- Zest & juice of 1/2 lime
- 1 Tbsp. butter, melted
- 1 Tbsp. brown sugar
- 2 sweet potatoes, cut into 1/4 inch planks
- Optional: shredded cheese
Instructions
- In a large skillet, heat 2 Tbsp. of olive oil over medium heat. Season both sides of the chicken with salt and pepper. Then, brown each side for about 4 minutes. Next, squeeze 1/2 lime over the chicken, cover with a lid, and allow to cook for 5 minutes.
- Meanwhile, heat the oven to high broil. Brush sweet potato planks with olive oil. Then, season with salt and pepper. Broil on the first side for about 7 minutes. Next, broil on the second side for 3-5 minutes, until fork tender.
- In a small bowl, whisk the hot sauce, lime zest, lime juice, butter, and brown sugar. Set aside. Remove the chicken, but keep the skillet on medium heat and allow the leftover juices to simmer for 1-2 minutes. Slice the chicken. Then, add hot sauce mixture to the skillet. Stir and allow to cook for 1-2 minutes. Add the chicken back to the skillet. Finally, stir until well-coated.
