Bruschetta Chicken

Ingredients

  • 2 medium tomatoes, diced
  • 8-10 basil leaves, chopped
  • Olive oil
  • 1 1/2 - 2 lbs. chicken tenderloin
  • Salt and pepper
  • 4 oz. fresh mozzarella, chopped
  • Optional: Italian dressing, Italian seasoning

Instructions

  • If desired, cover the chicken with Italian dressing, cover, and marinate in the fridge for a few hours up to overnight.
  • In a small bowl, mix the tomatoes and basil. Cover and refrigerate until ready to use.
  • Heat a skillet with 2-3 Tbsp. of olive oil over medium-high heat. Season the chicken with salt and pepper (and Italian seasoning, if desired.) Next, brown each side for about 4-6 minutes.
  • Spoon tomato mixture over the chicken. Top with mozzarella and a drizzle of olive oil.
