Boston Cream Pie Baked Oatmeal Muffins

Ingredients

  • 2 Tbsp. butter or coconut oil, melted
  • 1/2 c. applesauce
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1/2 c. oat flour
  • 1/4 tsp. salt
  • 1 c. milk (can use dairy-free)
  • 2 c. oats

Cream Filling

  • 1 pkg. instant vanilla or white chocolate pudding mix
  • 2 c. cold milk (can use dairy-free)

Chocolate Drizzle

  • 1 c. dark chocolate chips

Instructions

  • Preheat the oven to 350 degrees. In a large mixing bowl, whisk in the butter, applesauce, brown sugar, maple syrup, eggs, vanilla, baking powder, salt, and flour. Carefully whisk in the milk. Then, stir in the oats. Next, pour into a greased 9x13 baking dish or 12 lined & greased muffin cups. Bake for 30 minutes.
  • In a small bowl, whisk the pudding mix and milk. Cover and refrigerate until ready to layer.
  • Once cool, cut the oatmeal cups in half. Spoon or pipe the pudding between the oatmeal layers. Then, melt the chocolate and spoon or drizzle over the top. Store in the fridge.
