BBQ Chicken & Potato Planks
With only a few ingredients, these BBQ chicken & potato planks are loaded with big flavor! Simply add a green veggie for a complete meal!

Ingredients
- 2 baking or sweet potatoes
- Olive oil
- Salt and pepper
- 2 c. chicken, cooked
- 1 c. BBQ sauce
- Optional: cilantro, cheese, scallions, etc.
Instructions
- Preheat the oven to high broil.
- Peel and slice the potatoes a little more than 1/4 inch thick. I usually get about 3-4 planks per potato. Brush with olive oil and season with salt and pepper. Place on a baking sheet and broil for 7-8 minutes.
- Meanwhile, mix the chicken with the BBQ sauce. Remove tray from the oven and flip the potato planks. Top with BBQ chicken. Then, broil for an additional 3-5 minutes, until fork tender. Garnish with cilantro, cheese, scallions, etc.
