Banana Chocolate Chip Baked Oatmeal

Naturally sweetened with bananas and maple syrup, this banana chocolate chip baked oatmeal makes a healthy, whole-grain breakfast or snack!

Ingredients

  • 2 ripe bananas, mashed
  • 2 Tbsp. butter, melted
  • 2 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. flour (I used oat flour)
  • 1 c. milk (can use dairy free)
  • 2 c. old-fashioned or rolled oats
  • 1/2 c. chocolate chips
  • Optional: chocolate chips, peanut butter

Instructions

  • Preheat the oven to 350 degrees. In a large mixing bowl, mash the bananas with a fork. Next, whisk the mashed bananas, butter, maple syrup, vanilla, and eggs. Continue to whisk in the baking powder, salt, and flour. Carefully mix in the milk. Then, stir in the oat and chocolate chips.
  • Spoon mixture into a greased 9x13 baking dish or 12-14 lined muffin cups. Then, bake for 30 minutes. If desired, melt about 1/3 cup of chocolate chips and drizzle over the cooled oatmeal. Also great topped with peanut butter!
