Air Fryer Zucchini Fritters
With just 5 simple ingredients, these air fryer zucchini fritters make a great side dish! Simply add a protein for a complete meal!

Ingredients
- 2 medium zucchinis, grated
- 1/2 c. gluten free flour (I used oat and almond)
- 1/2 c. cheese, shredded (or grated Parmesan)
- 1 egg
- 1 - 2 tsp. Sriracha
- Salt and pepper
- Optional: sour cream, cream cheese, scallions
Instructions
- Grate the zucchini. Use a cheese cloth, clean kitchen towel. or paper towels to squeeze out as much water as you can. In a medium mixing bowl, combine the zucchini, flour, cheese, egg, Sriracha, salt, and pepper. Form into 8 patties.
- To help the patties keep their shape, place in the freezer for 10 minutes.
- Set the air fryer to 350 degrees. Lightly spray with oil. Brown the first side for 5-6 minutes. Then, flip and cook for an additional 6-7 minutes. Depending on the size of your air fryer, you may only be able to cook a few at at time. If desired, top with sour cream, cream cheese, and/or scallions.
