One of my favorite healthy, whole grain carbohydrates is whole wheat couscous. People often think of it as rice, but it’s actually a tiny pasta. I love the light and fluffy texture. Basic recipes taste great, but you can also add a few simple ingredients to really take this dish in many different directions. It pairs perfectly with chicken, beef, fish, pork, or even atop a salad. Plus, it only takes 5 minutes to prepare. That’s right! Besides making reservations, what else only takes 5 minutes??
If you don’t fancy yourself a great cook, start off with this dish. It is an easy recipe…no, seriously!! I mean…kinda hard to mess up stirring… You will need to bring water and/or broth to a boil (you know…when the liquid starts to make those little bubbles…) No worries- you got this!
This recipe is mildly advanced in the couscous world… For the most basic recipe, use a 2 to 1 ratio of liquid to dry couscous. Bring chicken broth to a boil, stir in the couscous. Then, cover, turn off the heat, and let sit for 5 minutes. BOOM- side dish is done. (maybe stir in a little Parmesan cheese😉)
- 1 Tbsp. olive oil
- 1 small onion, diced
- 3/4 c. orange juice
- 1 Tbsp. orange zest
- 1/2 c. coconut milk (from a can)
- 1 3/4 c. chicken broth
- 1 1/2 c. whole wheat couscous
- Optional- cilantro for garnish
- In a small saucepan, heat the olive oil over medium heat. Sauté the onions for 3-4 minutes. Next, add the orange juice, zest, coconut milk, and chicken broth to the saucepan. Bring to a boil. Then, stir in the couscous. Cover, turn off the heat, and let sit for 5 minutes.
